I work remotely, and I am a sucker for fast and easy lunches. There’s just so much work to get done!
This vegan broccoli tofu bowl is fast, simple, cheap, and microwaveable. Even Katie wants in! This is also a great dish for transforming leftovers.
6 Minute Vegan Broccoli Tofu Bowl (that you can microwave)
You’ll need:
- Frozen brown rice in a bag (I get mine at Trader Joe’s)
- Pre-made tofu (firm is best)
- Frozen organic broccoli
- Hot sauce (this is my favorite hot sauce for rice bowls)
Recipe:
First, take out a bag of brown rice out of the freezer and microwave it. Follow the directions on the bag, mine usually takes three minutes. Take it out and set it aside to cool.
Put two cups of frozen broccoli in a microwave safe bowl. Put a damp clean cloth or paper towel over the broccoli (no need to add water). Microwave for two minutes or until hot. Put aside to cool.
Then, put a cup of pre-made tofu in the microwave, again with a damp clean cloth or paper towel on top. This helps the cooking process by giving it a low-level steaming treatment.
Finally, throw everything together in a big bowl and throw some hot sauce on it. Marie Sharp’s Habanero Pepper Sauce is absolutely the best hot sauce for this. You could also use some low-sodium soy sauce, balsamic vinegar, or Huy Fong Fresh Chili Garlic Sauce (another personal favorite!).
Making this for friends?
The recipe above makes one serving, but you can multiply by however many people you’re feeding. If you’re doing a dinner, this can be paired well with Sapporo (alcoholic) or ginger beer (non alcoholic). If you want to get fancy, this rice bowl set is only $30 and is just gorgeous:

- Can you microwave all of these together to make it a one dish meal? Yes, but it will take longer and it won’t all be warm at the same time. Better to microwave separately and then reheat as one big bowl if needed.
- Can you do this on the stovetop? Heck yes! Follow the instructions on the packaging for your rice, broccoli and tofu.
- Does this all have to be frozen? Can’t I use fresh ingredients? Absolutely! I’m all about easy, but fresh is always more delicious.
