Vegan Bagel Breakfast

After some health complications in my family, I recently decided to go vegan for heart health. Mostly it’s going well, but y’all, breakfast is hard.

Here’s a vegan breakfast bagel I keep coming back to. It’s easy and cheap, and keeps me full. And it makes me happy!

Vegan Bagel Breakfast Recipe

You’ll need:

  • a bagel
  • sprouts
  • hummus (I buy it from the store, but make your own if you’re into it!)
  • tomato (roma tomatoes are best)
  • onion (I prefer red onions for this, but yellow or white will work)
  • salt and pepper
  • vinegar
  • lime
  • garlic
  • cilantro
  • jalapeño if you’re into it

Start with a great bagel you love. I have an absolutely amazing vegan / kosher / gluten free bakery by me called Rising Hearts Bakery, if you’re nearby go there! If not, choose your own adventure. My personal favorite are sesame bagels.

Next, make yourself some pico. You can buy it from the store, or make some ahead to keep in the fridge (we do this). Quick pico recipe: 1) cut the hearts out of roma tomatoes and dice them 2) chop onions, garlic and cilantro 3) add salt, pepper, vinegar, lime and garlic to taste 4) add those jalapeños yo!

Toast your bagel. Ok, now … dump your hummus, pico, and sprouts on the bagel. Yes, dump it. As much as you want. You can’t get much healthier than this.

And that my friends is your totally vegan, very filling, quick fix breakfast bagel.
