What is breakfast time like at your house? At mine, it’s a chaotic several minutes of running around trying to feed the kiddo, get him into clothes, pack the lunchbox, find that second shoe… It’s hard!
But you still deserve a good breakfast for you. Here’s a really easy version of avocado toast that you can make in a jiffy.
Simple and Delicious Avocado Toast for Busy Moms
You’ll need:
- A good small avocado
- Sourdough bread
- Sprouts
- Cherry tomatoes
- Hot sauce (if you’re like me and put it on everything)
Recipe:
Start your sourdough bread in the toaster.
Cut your avocado in half and throw away the pit. With a knife, cut lines 4-5 lines vertically down the avocado. Then cut 4-5 horizontally. Use a spoon to dump that delicious avocado out of the rind and into a bowl.
Use a masher to give yourself a good rough mash. Pictured above is my favorite masher, I’ve had it for years. I don’t think they even make it anymore! This particular masher is from a brand called Joie, if you find it please send me the link so I can add it here. And if you don’t have a masher, invest in one. I use this tool constantly.
If you’re a hot sauce fan, mix in some hot sauce here. Sriracha would be delicious. You know my favorite though is Marie Sharp’s.
Dice your cherry tomatoes.
Get your toast out and layer on a thick spread of avocado. Add the sprouts, then top with cherry tomatoes.
You can customize this endlessly! Want more protein? Add egg. Fewer carbs? Use rice cakes instead of bread.
And, if your household is like mine, some part of your kid’s breakfast will be left uneaten. This is a great way to use up that last bit of bread left on their plate!
